Sweet Potato and Butternut Squash Balsamic Vinegar Lemon Thyme … Something.

I suppose this is probably closest to tsimmis but without carrots or anything dried… it’s just an orange veggie side dish that I lack a name for. I’m in the midst of what is now a 3 year sweet potato/yam phase so *shrug* I’ll figure out what to call it eventually. The Trader Joe’s near us had butternut squash for $1.69 EACH so it was my obligation to buy one and make something out of it. This only used half of it, the other half will either become soup or gnocchi. I’ll let you know. CIMG2056

This is kind of absurdly easy.

Butternut Squash and Sweet Potato Thing

  • 1 large yam or sweet potato, in thin half moon slices
  • 1/2 a butternut squash, in thin half moon slices
  • 2 Tablespoons balsamic vinegar
  • 2 Tablespoons olive oil
  • 2 teaspoons lemon juice
  • 2 teaspoons thyme
  • 1 Tablespoon water

Preheat oven to 375.

Combine ingredients in pan. Cover with tin foil. Leave alone for 30 minutes then uncover and cook 15-20 minutes more until things start to crisp a little on the edges.
